Mmmmm....

It really was a wonderful afternoon though, there is something so amazing about being surrounded by children. Their joy is contagious and their wonderment at the world around them draws you in and provides so much joy. It is amazing how the smallest things; balloons, bubbles, kazoos and such can delight them.
Here is the recipe for the cake pops, or cake balls as Chris calls them... you won't be sorry (and these were very well received and SUPER kid friendly)
Step one:
Make your favorite cake (9x13 size cake will yield 40 pops)
Step two:
Transfer to a rack and lack cool completely in the pan.
Step three:
Crumble the cooled cake into a BIG mixing bowl. Crumble, yes, completely. Then stir in about 1 1/2 cups frosting. Really mix the frosting and cake together until they are completely integrated into each other. (might need to use your hands). It’s important to mix them together thoroughly otherwise your cake balls might fall apart.
Step four:
After the frosting and cake are completely blended together, form into firm balls (ping pong sized) Place the balls on a wax paper or parchment lined baking sheet and refrigerator for 10 minutes. Once cooled, melt a small amount of chocolate to use as an adhesive for the lollipop sticks. Dip the sticks (purchased at a craft store) in the chocolate and then push into the cake balls, about 2/3 of the way down. Refrigerate these for a good four hours or put them in the freezer to speed up the process.
Step five:
Melt your chocolate or candy melts and dip the cake balls, coat completely with chocolate and then sprinkle or dip them in whatever decorations you’d like. Let cool on wax paper or stick them in styrofoam if you don’t want a flat side. (candy melts work better, can taste like chocolate, vanilla, etc. and you can use food coloring to dye)

I have made these before. Few tips from experience-
ReplyDeletePut the cake balls (yes I call them that too :) ) in the freezer so they get nice and hard.
It's easier if you use a chocolate coating- like for strawberries than just regular chocolate.
When I made them, I didn't put in sticks but them in a small glass bowl and then put the smaller bowl in a larger glass bowl with tea lights around them. It looked really cool!
Also, when a friend made them and inspired me, she put Hawaiian rock salt on the outside to get the sweet and salty thing going on. Yummmm...
I love, love, love this idea and will have to file it away for Addy's first birthday. And you know me well enough to know that I'll need you to remind me that this is what I want to do for her first birthday - so, in July, remind me of this awesome idea!
