We had a fantastic weekend, full of summer fun and good times like brunches outside, weddings and trips to the zoo and to cap the weekend off we BBQ'd
I found a great recipe for chicken, that I will definitely be cooking up again sometime soon, and I got to use my fresh herbs from the back porch too!
Ingredients
4 boneless skinless chicken breasts
1/2 cup freshly squeezed lime juice (2 large limes)
1/3 cup oil
2-3 tablespoons honey
1 teaspoon dried thyme
1 teaspoon dried rosemary
2 garlic cloves, minced (or to taste)
black pepper (optional)
Directions
1In a bowl combine/whisk the lime juice, oil, honey, thyme, rosemary, garlic and black pepper (if using).
2Place the chicken in a shallow glass baking dish.
3Pour the marinade over the chicken, turning to coat.
4Cover and refrigerate for a minimum of 3 hours.
5Grill (or broil) for about 4 minutes on each side, until chicken is cooked through.
