Brunch Time!

I had a bunch of people over for brunch on Sunday, it was a low key affair and these cinnamon sugar muffins were a hit... thank goodness too because in my haste to get the house picked up and everything in order, the first batch I made with half as much butter... second time around, with the assistance of my sou chef I got the batter remade quickly... and managed to get them out of the oven and dusted with cinnamon sugar without forgetting!

Cinnamon Sugar Muffins
wet ingredients
3/4 cup fresh milk
1/2 cup melted butter, applesauce or oil
1 fresh egg
dry ingredients
2 cups flour
2/3 cups sugar
3 teaspoons baking powder
1 teaspoon salt
cinnamon-sugar topping
1/2 cup melted butter in one bowl
1/2 cup sugar with 1 teaspoon cinnamon in another bowl
Heat oven to 400ºF. Butter bottoms of 12-muffin cup pan.
Beat milk, butter and egg in a medium bowl. Add in flour, sugar, baking powder, and salt all at once. Stir just until flour is moistened. Batter will be lumpy; do not over stir.
Use a large cookie dough scooper to fill muffin cups 3/4 full. Bake until golden brown, 16 to 20 minutes. Immediately remove from pan and carefully roll hot muffin tops in melted butter, then in cinnamon-sugar mixture.
